Pams-hams bone

½ pound dried lentils

6 cups water

1 small onion, chopped

2 cloves garlic, minced

1 small can V8 juice

¼ cup oil

1 t. basil (optional)

salt and pepper to taste

Rinse lentils thoroughly. Combine all ingredients.

In crock pot, cook on low 8-10 hours, Remove bone from soup. Cut up ham, return chopped ham to soup

On stove top: Combine ingredients and bring to a boil. Then cover and simmer for 2 hours or until beans are tender. Remove bone from soup. Cut up ham, return chopped ham to soup

Split Pea Soup or Navy Bean Soup

Prep time: 15 minutes Cook time: see below

Pams-hams bone

2 cups dried split peas or dried navy beans

6 cups water

2 chopped carrots

1 large onion, chopped

1 t. thyme (optional)

1 t. basil (optional)

salt and pepper to taste

Rinse peas thoroughly. Combine all ingredients

Recommended: In crock pot, cook on low 8-10 hours. Remove bone from soup. Cut up ham, return chopped ham to soup.

On stove top:

Soak beans overnight with ¼ t. baking soda if possible.

Combine ingredients and bring to a boil.

Then cover and simmer for 2 hours or until beans are tender.

Remove bone from soup.

Cut up ham, return chopped ham to soup

Mixed Bean Soup

Prep time: 15 minutes Cook time: see below

Pams-hams bone

1 pound dried mixed beans

1 can crushed tomatoes

1 large onion, chopped

4 cups of water

2 stalks celery - chopped

2 carrots – chopped

3 cloves garlic

1 t. basil (optional)

salt and pepper to taste

Rinse beans thoroughly. Combine all ingredients

Recommended: In crock pot, cook on low 8-10 hours. Remove bone from soup. Cut up ham, return chopped ham to soup.

On stove top: Soak beans overnight with ¼ t. baking soda if possible. Combine ingredients and bring to a boil. Then cover and simmer for 2 hours or until beans are tender. Remove bone from soup. Cut up ham, return chopped ham to soup

Broccoli cheese soup

Prep time: 20 minutes, Cook time: 30 minutes

Pams-hams bone

1 bunch broccoli, chopped (I use tops mainly)

1 – ½ cup milk

1 (14 oz.) can chicken broth

1 cup water

1 lb. Shredded cheddar cheese or Velveeta

5 T. butter

4 T. flour

salt and pepper to taste

Steam the broccoli in the microwave.
(1/2 inch of water in casserole dish, cook about 3 minutes or until you just start to smell it)
In large soup pot, melt butter and stir in flour. Slowly add remaining ingredients, stirring constantly. Add ham bone last. Cook on low 30 minutes or more. If it is thicker than your desired consistency, add more milk. Remove bone from soup. Cut up ham, return chopped ham to soup

Wild Rice and Ham Chowder

Pre Time: 30 minutes, Cook time: 45 minutes

A. 1 ½ cups water, ¾ cup wild rice

B. ¼ cup butter or margarine, ½ cup chopped onion, 3 cloves garlic, minced, ½ cup flour, 4 cups of water and 4 chicken bouillon cubes

C. 1 ½ cup peeled, cubed potatoes, ½ cup chopped carrots, ½ t. thyme, ½ t. nutmeg, salt and pepper to taste

D. 1 (17 oz.) can whole kernel corn, undrained, 2 cups half n half (or milk), pams-hams bone
Cook A. Set aside. B. Combine butter, onion and garlic. Cook until onion is crisp-tender. Stir in the flour. Cook 1 minute stirring constantly. Add water and bouillon.
Add C. Bring to a boil, reduce heat, cover and simmer 15-30 minutes. Add D and simmer 20 more minutes. Remove bone from soup. Cut up ham, return chopped ham to soup

When winter's winds blow it isn't all that tempting to go out and explore a city, but in Calgary there is so much to do that it becomes difficult to stay indoors!

Of course not all of the city's top ten activities take place in the great and snowy outdoors, but they are all the more enjoyable because of the seasonal conditions. From January through March all of Calgary is bursting at the seams with great activities, and among the most preferred are:

1. Fireside dining - you don't have to stay at home to enjoy a cozy meal beside the fire. There are many restaurants in Calgary that serve hearty fare in spaces gently lit and warmed by large fireplaces. Some have scenic views and park settings, while others are set on the areas lakes or rivers. Try such restaurants as the Q Haute, The Ranche, Newport Grill and River Café.

Crab Rangoon

Crab Rangoon is a staple of Chinese and most other kinds of oriental restaurants, but they are not a traditional Chinese dish. There are very few authentic Chinese dishes that call for any kind of cheese and none that use cream cheese.

There are two schools of thought concerning the origins of this dish. One states that it was a food that was introduced at the World's Fair held in St. Louis Missouri in 1904. The other story is that the dish was invented at the famous Trader Vic's Polynesian restaurant in Oakland California in the early 1950's. Whatever their origin, they're tasty, and easy to make!

1 clove garlic, minced 1 green onion, minced pinch of pepper 1 teaspoon soy sauce 8 oz. package of cream cheese 8 oz. fresh or canned crab meat wonton skins oil for frying

Tour Crab Rangoon

Break up crab meat and combine with cream cheese. Add remaining ingredients (except for wonton skins) one at a time, thoroughly mixing before adding another ingredient.

Lay out wonton skins and put 1 teaspoon of the mixture in the center of each wonton and spread it out, leaving enough of the edges of the wonton bare that they can be pressed together. Wet the edges of the wonton and fold to create a triangle, making sure to remove all the air before pressing the edges together. Continue until all mixture is used up, covering finished rangoons with a towel so they won't dry out.

Put frying oil in wok at least 2 inches deep. Heat oil to 360-375. Carefully slide in wontons and let fry for about 3 minutes total, turning once half way through. Do wontons in batches, the number of each batch depending on the size of the wok.

Serve with sweet and sour sauce, soy sauce, hot mustard, or eat them plain! Cooked or smoked salmon can be substituted for the crab. This recipe makes about 48 crab rangoon.

How to Cook A London Broil

A London broil is a great way to cook steak. Note that I said a “way to cook.” In other words, it’s a method, not a specific cut of meat. This distinction has confused many a novice cook.

Adding to the confusion, some butchers will call a cut of meat “London broil.” Usually, though, the cut of beef used for a London broil is flank steak, although other cuts, notably top round steak, may be substituted.

Flank steak is naturally tough, so you need to tenderize it (by pounding with a mallet) or marinate it, or both, before cooking with it. To turn it into a proper London broil, you ... broil it. Makes sense, right? But not so fast ... you can also grill it and still call it a London broil.

Here are two recipes, one for broiled London broil, and the other for grilled London broil.

London Broil (Broiled)

Ingredients

<>1 beef flank steak (1 to 2 pounds)

<>1/3 cup Italian salad dressing

<>2 tablespoons red wine or red wine vinegar

1 clove garlic, minced

2 tablespoons cooking oil

Directions

1. Combine salad dressing, wine or wine vinegar, garlic and cooking oil in a bowl to make a marinade.

2. Make several shallow cuts on both sides of the steak. Place the meat in a baking dish.

3. Brush the steak with the marinade; be sure to coat both sides. Cover pan with plastic wrap. Place in refrigerator and let marinate for 1 hour.

4. Remove from refrigerator. Pour off excess marinade.

5. Preheat oven broiler. Place pan with steak approximately 3 inches from top heat. Cook 5 to 8 minutes per side (to medium doneness).

6. Cut steak into slices and serve.

London Broil (Grilled)

Ingredients

3/4 cup cooking oil

3 tablespoons lemon juice

2 tablespoons red wine or red wine vinegar

2 tablespoons soy or Worcestershire sauce

1 clove garlic, minced

1 teaspoon salt

1 tablespoon coarsely ground black pepper

1 tablespoon parsley flakes

1 flank steak (1 to 2 pounds)

Directions

1. Combine all ingredients except the meat in a bowl to make your marinade.

2. Make several shallow cuts on both sides of the steak and place in a baking dish. Try for a cross-hatching effect with several overlapping, diagonal cuts.

3. Brush steak with marinade, making sure to coat both sides. Cover pan with plastic wrap, place in refrigerator and let marinate for at least 1 hour.

4. Grill steak over hot charcoal or other high heat for 5 to 8 minutes per side, depending on the degree of doneness desired. Baste with leftover marinade if you wish.

5. Remove steak from grill, slice into thin strips, and serve.

Lamb navarin

Whether you like it or not, you are a representative of the United States once you travel to a foreign country. Many have to come to associate such questions as: "Don't you have an American cup of coffee?" or "You don't speak English?" or "That's not how we do things at home." as typical American behavior overseas.

Nonetheless, there are several things you just can't do when you travel as they are regarded in bad taste: taking photographs of people without asking their permission, acting critical or amused by customs that are alien to you, getting too familiar, too fast (for example, slapping someone on the back, even if the gesture is well intentioned).

To be regarded as a good ambassador (and save yourself from embarrassment), it's advisable to read a few books or research online about the culture and customs of the country you plan to visit.

In some countries, you'll see a lot of hugging and kissing going on among the locals (Greece, Italy, Latin countries, Slavic countries); an affectionate hug or peck on the cheek that you share with a new acquaintance is fine, but usually if you are responding to, not initiating it.

Language/Gestures: Taking a crash course in the language of the country you will be visiting rarely results in the mastery of the language. Instead, learn some polite expressions (hello-goodbye-thank you) and relax. English is pretty common worldwide, especially in tourist areas, and you can always include body language to get your message across. However, some American gestures have totally different meanings in other countries. For example, in Bulgaria, shaking your head horizontally means "yes"; shaking it vertically means "no". Also using the American gesture for "OK" (the thumb and forefinger making a circle with the other fingers pointing up) can be embarrassing. In Brazil that gesture means "screw you": in Japan it means "money": in Southern France it means "zero" or "worthless".

Food/Drink: You may find yourself staring down at a local delicacy - snake soup in China, a yak burger in Tibet, sheep's eyes in Saudi Arabia, calves' brains in France - and wonder what to do, particularly if you are a guest in someone's home. Be brave, take small bites, and pretend it tastes like something you like. When presented with a strong alcoholic drink, like ouzo in Greece, take small sips and stop when you must (you can refuse, citing medical reasons as your excuse). Remember that Hindus and some Buddhists don't eat beef (the cow is sacred); Muslims don't eat pork, and strict Muslims abstain from alcohol. If you are eating with Muslims, never touch food with your left hand (the left hand is for bathroom use and is considered unsanitary; using it would be very offensive).

Socializing/conversations: If you are acquainted with the history and culture of the country, you shouldn't get unnerved. In general, some topics can be touchy or controversial, like money, religion, politics, and sex. But the particular nature of the people is critical. The Japanese do not want to talk about World War II; the French scowl at the classic American question: "What do you do for a living?"; the Chinese call their country "China" or the "People's Republic of China" - not "the Mainland"; people in Scotland are "Scots" or "Scotsmen," not "Scotch" (the drink) or "Scottish" (the language or the terrier).

How to Cook Snapping Turtle

Where I grew up in south Louisiana, we saw plenty of snapping turtles, but most of us never thought to eat one. Maybe it's because we were blessed with having so many crawfish around, which were much easier--and less dangerous!--to catch and cook.

Nevertheless, occasionally one of my readers has asked me how to cook a snapping turtle. So, if you happen to find one of these rather nasty looking critters in your fishing net, or have one packed away inside your freezer, here's a great way to prepare it.

Assuming you have a live snapper on your hands, the first step, of course, is to kill it. Don some gloves, grab a sharp knife, and cut off the turtle's head as quickly and cleanly as possible. There will be blood, of course, which you should allow to run down the drain of your sink until the flow has slowed considerably.

Now drop the turtle's body, shell and all (except the head, of course) into a big pot of boiling water. Boil for 8 minutes. This is mainly to make cleaning it easier.

Remove the turtle from the pot and allow it to cool sufficiently to be able to handle it. Take your sharp knife and cut away the plastron, or lower shell. Remove the intestines and other organs. Now cut the good stuff, the meat, away from the top shell; be sure to include the legs and tail, which are the best-tasting parts (the skin should come off of these easily after boiling).

You can cook turtle meat, whether from a snapper or some other species, in many different ways. My favorite is this snapping turtle stew:

1. Cut the turtle meat into cubes.

2. Begin browning the meat in a hot frying pan with cooking oil. Add a chopped onion, one or two chopped cloves of garlic and continue cooking until the meat is browned all over.

3. Drain the oil from the frying pan. Remove the meat, onion and garlic and place them in a saucepan (one with a lid). Add 2 cans of tomatoes and 4 sliced or chopped potatoes, some salt and pepper, and enough water to cover everything.

4. Cover the saucepan and cook at a strong simmer for 40 to 50 minutes.

5. Enjoy!

How to Cook Mahi Mahi

If you’ve wondered why you’re seeing mahi mahi on so many restaurant menus these days, one of the reasons is a little trick that’s being played on you. Mahi mahi (Hawaiian for “strong-strong”) is just another name for the fish called dolphin. The restaurants have switched to the name “mahi mahi” so you won’t get confused and think they’re trying to serve you a slice of that mammal that is called dolphin. You wouldn’t like the idea of chowing down on Flipper (would you?).

Sometimes mahi mahi is hyphenated (“mahi-mahi”), and sometimes it goes by the alternative name, dorado. Whatever you choose to call it, this is a fish that has both great flavor and the nice, firm texture that most seafood lovers prefer.

Mahi mahi swim in many waters, but are found most abundantly in the warm Caribbean Sea and the Gulf of Mexico. Next time you dine on mahi mahi—or buy some from the supermarket—you can be confident that it probably came from one of those two bodies.

Fresh mahi mahi is generally available throughout the year, but, in North America at least, you will find the best selection in mid-spring through mid- to late-summer. You can also find frozen mahi mahi fillets all year round.

When buying fresh mahi mahi, look for fish whose meat is pink or light beige. Darker meat is certainly safe to eat, but the taste might be too strong for some people.

Mahi mahi is a great all-around fish for just about any cooking method you want to use. Poach it, steam it, fry it, bake it, grill it—it’s all good. Just be careful not to overcook it.

Here’s a recipe I particularly like for broiled mahi mahi. The zesty orange-juice glaze adds extra interest.

Ingredients

2 pounds mahi mahi fillets (skinless)

2 tablespoons prepared mustard

1/2 cup cooking oil

1/2 teaspoon salt

1 clove garlic, minced

1/2 cup frozen orange juice concentrate

1 bay leaf

Directions

1. Cut the mahi mahi fillets into serving size portions and place side by side in a baking dish.

2. Thaw the juice concentrate. Crumble the bay leaf. Combine these with the other remaining ingredients and mix well to create a marinade.

3. Pour the marinade over the mahi mahi (make sure you turn the fish to coat both sides).

4. Cover baking dish with plastic wrap and place in refrigerator for 30 to 43 minutes.

5. Place pan on top rack of oven and broil 5 or 6 minutes on each side. Fish will be ready when you can easily flake it with a fork.

6. Serve!

So the heavier and faster an object is moving (ie your fist), the more damage it is going to do. While being big can be an advantage, it is more important to use your weight correctly. Credibility of Distance Learning in the Martial Arts

Something in the martial arts that is argued back and forth all the time is the effectiveness of distance learning versus traditional training in a dojo and can one learn the martial arts to any degree of proficiency through distance learning. In an age where communicating and learning via the Internet are staples of every day life and the ability to learn anything efficiently is open to everyone because of this, my answer is a resounding "YES!".

Consider this...one of the recent arguments I have encountered is that to earn a Dan ranking takes years and years of blood, sweat and tears and that only after you have spilled blood on the dojo floor can you be considered credible to wear the Dan you are awarded by XYZ Organization, School, Federation, etc. and only through this method can you become a better practitioner. While I agree with the idea in general, the argument against distance learning is that there is no way you can advance rank as a Black Belt, or as a Colored Belt for that matter, unless you train in a school under age old traditional methods. There is no way you can possibly learn any system of self-defense through "home study" methods.

Muay Thai in Thailand

OK..well...let's say that a person has put 15-20 years into his/her training and they now wear the rank of 4th or 5th Dan. This person has trained and completed all of the requirements to advance his/her rank. I guess some could say that because of the rank and the years put into the training that he/she is deserving of praise and respect, being of great honor and integrity because of the advancements and the time spent training in the arts. This person obviously has learned what it means to be a better practitioner and is now credible in the eyes of his/her peers. Seems like a solid point.

In Thailand Credibility of Distance Learning in the Martial Arts

Now, on the flip side of that coin, let's say that this same person on the outside looks and acts like the rank they wear and talks the talk of a true Black Belt but underneath has a drinking problem or a drug problem or, worse yet, both. They treat people with disrespect behind their backs and are full of ego. Every time something goes wrong in his/her life all they want to do is go out, get high and pick a fight. Just so you know, I am not speaking hypothetically. I trained under just such a person. Does this mean he/she deserves to wear the rank of an advanced Dan just because they have put their time in at a traditional school and passed the curriculum? Does this make him/her better than me or anyone else who wants to open up their learning to a credible, comprehensive distance learning program taught by advanced, committed, honorable individuals? I think not as we all know that the martial arts are about so much more than just the belt one wears.

The traditional thinking is if you choose to train like this that it is lacking in so many respects, ie: training quality, lack of training partners, too easy to slack off and not train, no one is there to insure you are actually performing the material, and on and on, that there is no way this can work and once you receive your rank, it is just a "piece of paper" from a "diploma mill" or in the case of a Dan ranking, a paper "Black Belt Mill". Well, let me pose this question to you, what takes more effort, dedication, perseverance, integrity and personal commitment, walking into a local school and having someone tell you what to do or to take a course and break it down yourself, put together a training schedule based around your school or work schedule, provide yourself with a place to train and then effectively complete the training per belt rank? I realize this question is rhetorical but the point I am trying to make is that BOTH methods of study, in class and home study, are just as effective in learning any type of material and that as martial artists, to be so closed minded about knowledge via sources "outside the box", especially in this day and age of advanced technology, is a true detriment to the advancement of the arts as a whole.

The traditionalists fail to recognize the doors this can and will, most assuredly, open up to students around the world just as it has with all areas of education. Right now...today...you can earn the highest level of certified, recognized, accredited university degrees online from the most reputable Colleges and Universities - WORLD WIDE! This is an absolute, indisputable fact that even the most dyed-in-the-wool traditionalist cannot refute. In my mind, it isn't so much how you learn what you learn but how you apply that knowledge after you have learned it. I have always said that certifications and degrees are just pieces of paper but what ultimately makes them so valuable is the application of that knowledge and how it is presented to others down the line. We should always be moving forward with our knowledge, always be willing to embrace new ideas and concepts. If we stop learning, we stop growing.

As the sport is constantly evolving, so too must its practitioners evolve. No longer can we just accept the traditional training orthodoxy as the rule. Just the simple fact that hand-to-hand combatives have become so much more advanced in just the last 10 years would dictate that we as practitioners of the arts should be more open-minded and willing to advance our learning from as many sources outside of our own backyards as possible. Distance learning offers just such a solution by eliminating the geographical boundaries that currently exist in limiting students to train and learn in just one setting, in one style, and from one instructor. With the Internet, video conferencing, online tutorials, forums, blogs, etc. literally at our fingertips, the possibilities are endless. No longer will students have to be relegated to choices for learning that only include the local dojo. Imagine being able to train with and share information and ideas about advancing the arts with students from all around the world in real time!

Of course, to that extent, the traditionalist would argue that there would be a problem with time differences as well as differences in training disciplines and that there is no way this would work. Always an excuse. I have heard this argument for years but that is because they fail to see the potential that exists in people to come up with long term solutions to these problems, solutions that are offered by just such a group of dedicated individuals in the AKPKF...American Kick-Punch Karate Federation, headed by Sensei Danny Hill. This is an organization that leads by example and is all about keeping the integrity of the arts intact while attaching 21st Century thinking to an age old problem of bringing the training and discipline to students around the world who otherwise would not have access to the information and they do it for FREE!

Now, I understand that traditionalists want to keep the training in the dojo's...OK...but what about the aspiring student who wants to become involved in the martial arts but has nowhere to train, or who lives in a remote area where it is 50-100 miles to the nearest dojo? What about the people around the globe who live in villages where there is no training for thousands of miles around? How then does the traditionalist solve that geographical problem? They solve it by continuing to argue for classroom training as the only beneficial means of learning self-defense. In my opinion, what that argument really boils down to is money.

Think about it. They insist that receiving your certification via distance learning is not credible yet they take "Little Johnny's" tuition every month, usually an exorbitant amount, and pass the student through the system whether he/she has learned the material or not. Again, I am not speaking hypothetically here. I have seen this first hand even at the Black Belt level. This problem exists on a wide scale and is becoming worse every day. The traditionalists say that distance learning has become a blight on our beloved art form and that it is denigrating everything that is sacred about our beloved sport, even to the point of "bastardizing" what the arts stand for, while all along doing the same thing by charging outrageous monthly fees and providing training that is mediocre at best. To me, this action is deplorable and not even remotely deserving of respect and honor, yet this practice continues to grow day by day with new "McDojo's" springing up on just about every street corner. The traditionalist view has become about "selling the product" and not about "teaching the art". Anything that does not "jibe" with their way of thinking is garbage and only their style and only the way it is taught by them, is the "be all to end all" and the only path towards martial arts excellence. In my opinion, there is nothing credible about this practice or this way of thinking and it is only hurting the arts, not enhancing them.

In closing, let me state that I have had great personal success training in both mediums. Each method has its place in education and each, in my opinion, is equally effective. I believe that both methods can co-exist peacefully. I personally have continued to expand my knowledge of self-defense through many different methods of learning such as books, tapes, cd's, dvd's, online tutorials, and traditional training on the mats with practitioners who are also open-minded enough to see the positive impact that distance learning can have on all of us if we would just embrace the need for this type of studying. I have my own dojo and am about to begin my training in Renzoku Jiu-Jitsu, a program that is taught by Soke John Cozatt who happens to live on the East Coast (I live on the West Coast) and yes, it is a distance learning program, one that I can advance to 5th Dan in and since that is the highest level of achievement in that system, that is my goal. In lieu of this program, in order for me to train in a "credible" traditional jiu-jitsu class setting, I would have to drive 100 miles round trip 3 nights a week at great expense to accomplish what I can do in my own dojo via distance learning. Whether or not I make it to 5th Dan will strictly be up to me but that really isn't the issue. The point is that the opportunity exists for all of us to utilize modern day technology to continue to move forward with our training and help advance this sport through the 21st Century. We have to continue to be open to new training methods and learning techniques so that the martial arts can continue to grow and survive. I for one will do all I can to be at the forefront of that movement.
